Coconut Ice
INGREDIENTS

2 cups icing sugar

1 tin condensed milk
-
3 cups desiccated coconut

A few drops of food colouring (traditionally pink for half the mixture)

Supa Mama® Baking Paper
METHOD

Make the Base: In a large mixing bowl, combine 2 cups icing sugar, 1 tin condensed milk, and 3 cups desiccated coconut. Stir until the mixture comes together.

Divide & Colour: Split the mixture into two equal parts. Leave one half white, and add a few drops of pink food colouring to the other half. Mix until evenly coloured.

Layer It Up: Line a baking tray with Supa Mama® Baking Paper for easy removal. Press the white mixture evenly into the tray, smoothing it out with the back of a spoon.Cook the Quesadilla: Preheat a skillet or a grill pan over medium heat.

Add the Colour: Spread the pink mixture on top of the white layer, pressing down firmly to create a neat two-tone finish.

Set & Slice: Leave to set at room temperature until firm. Once ready, lift out using the Baking Paper and cut into neat squares.
